Sweet Potato Recipe

   

SWEET POTATO TAWA FRY


Sweet Potato is a root vegetable. Sweet Potato leaves are also edible. In north India, it is called as Shakarkand while in east India, It is called as kanda. It is highly nutritious. From sweet potato, we can many types of dishes. But today I am sharing with you how to cook in tawa.

NOW SOME NUTRI FACT OF SWEET POTATO

  • It is rich in many minerals like niacin, copper, vitamins, etc.

Ingredients:

Sweet Potato
1nos.
Mustard Oil
2 tbspoon
Gram Flour (besan)
1 tbspoon
Rice Flour (chawal ka atta)
½ tbspoon
Turmeric
2 tspoon
Red chilli powder
1 tspoon
Salt














Instruction:
  1. First, wash the Sweet Potato cleanly and cut the sweet potato in slice. Thickness of each slice should be 3mm.
  2. Then add gram flour (besan), Rice flour (chawal ka atta), Turmeric, red chili powder ad salt according to your taste.
  3. Now heat a tawa on gas.
  4. Once it heated add 1 tbspoon mustard oil to it and spread all over.
  5. Then place all the slice one by one.
  6. Now turn all slices to its other side and low the flame.
  7. Cook it 7-8 min in the lower flame and add another tbspoon of mustard oil.
  8. After the potato got soft turn of the heat and serve hot.
  9. You can garnish it with the coriander leaves.

Authentic Odia recipe Simba Rai

Simba Rai (Flat beans Curry with mustard paste )

  

As we know this is Winter season and in this season we can find many seasonal vegetables like Carrot (Gazar), Spring Onion(Hari piaj), Capsicum, Green Peas(hare matter), Flat beans(Semfali), etc.
So today my recipes is a winter season recipe. This is an authentic Odia recipe and it is cooked mostly in the western Odisha.
Flat beans have different names in different states. In north India, it is called semfali. But in Odisha, it is called Simba.

Ingredients:
Flat Beans
250grms
Potato
2 nos.
Tomato
1 no.
Eggplant
1 medium
Mustard
2 tbspoon
Cumin
1 tbspoon
Red Chilli(dry)
5-6 nos.
Garlic
4-5
Mustard Oil
2 tbspoon
Turmeric

Salt

Kashmiri red
Chili powder
(optional)
Sugar
1 tspoon

Simba Rai


Instruction:
1.     Cut all the vegetables in a square. Soak the mustard seed, cumin, and red chili.


2.     Put a kadai on gas and add 1 glass of water. Add all the vegetables to it except tomato. Add 1 teaspoon salt and 1 teaspoon turmeric. Cover the lid and cook it for 10 min on medium to high flame. Once it is done then it takes out in a bowl.
3.     Make a smooth Paste of the cumin, mustard, red chilli and garlic.

4.     Then heat a pan on the gas. Once the pan heated properly add 1 tbspoon of mustard oil and one tspoon of mustard seed and 2 red chillis (dry).
5.     Then add chopped tomato. Then add salt and 1tspoon of turmeric and cook the tomato until it soft.
6.     After the tomato got soft add that mustard paste along with some water and cook it for 1- 2 min. (N.B after putting the paste, don’t cook it for more than specified time earlier otherwise it will taste bitter)
7.     Then add all the cooked vegetables and 1 tspoon sugar to it. Cover the lid and cook it for 5-7 min on low flame.
8.     Lastly, add coriander leaves and serve hot.

Western Odisha famous Pitha recipe

Tekar Guda Pitha


Before going to this recipe I am going to tell you something interesting about the state from which the recipe belongs to. So the recipe belongs to the State is Odisha. Odisha is a beautiful coastal state. There is so many visiting place for example, Puri(well known for cart festival), Konark’s Sun Temple, Sambalpur’s Hirakud Dam, which is World’s longest dam, Bargarh’s Dhanu Yatra which is world’s largest open-air theater and many more. When I am talking about Odisha, which is my motherland how can I forget about the food.
 Odisha’s food is very authentic, tasty and delicious. You can find every kind of food here from savoury to sweet. When I am talking about Odisha food I must mention the Pitha recipes. There are so many Pitha recipes in Odisha and it is favorite food of every Odia. And trust me there are varieties of Pitha like Aarisa pitha, kakara pitha, chitau pitha, manda pitha, Anduri pitha, tekar guda pitha etc.

Recipe:

Ingredient: (Served for 4 people)


Boiled Rice
1 cup
Raw Rice
1 cup
Urad Dal
1 cup
Moong Dal(yellow)
1 cup
Milk
½ liter
Cardamom
4-5
Sugar
3 tbspoon
Salt

Instruction:
1.     First take 1 cup of each raw rice, boiled rice, Urad dal, moong dal(yellow) and soak them at least 7-8 hr(It’s better to soak them in the morning).
2.     Then make a batter with the help of a grinder. The consistency of the batter should not be thick or runny either.
3.     Leave the batter overnight so that the batter can start fragmenting.
4.     Now boil the ½ liter milk in a pan, then add sugar and cardamom 4-5 to it and boil it about for a 2-3 minute.
5.     Remove the milk from the flame and pour it on a large wider pot.
6.     Now heat a Kadai properly. Add salt 1 teaspoon in batter and mixed it properly.
7.     Once it heated pour 1 spoon of batter to it and cover it with a lid. Cook it slow flame for about 4-5 minutes.
8.     Once it is properly cooked you can small holes are created.
9.     Then remove it from Kadai and drop it into that milk. Serve Hot.
It is a very healthy dish as this recipe cooked without oil. If you are diabetic then you can eat this recipe without milk.

Spring Onion Saag( Piaj Saag)

Authentic Odia Food piaj saag or Spring Onion saag


Being an Odia, Saag is one of my favorite dish to eat. In Odisha saag is prepared almost every house in their lunch. There are varieties of saag recipes in Odisha. One of them is Piaj Saag. When it is cooked with eggplant and tomato, it’s deliciously increased to a higher level.

Now some nutria fact of Piaj Saag or Spring onion:

  4.          Contain cancer-fighting Compound
  5.          Helps in controlling blood sugar
  6.          Boost bone density
  7.          Helps in boosting the digestive system

Recipe:
Ingredients: (served for 3 people)

Spring Onion(Piaj Saag)
500grams
Eggplant
1 medium
Tomato
2 medium
Mustard seed
2 teaspoon
Red chili(dry)
2 -3
Urad dal Badi
7-8
Oil(Mustard)
1 tbspoon
Garlic
2-3
Salt



1.    
First, wash the spring onion thoroughly and chopped it finely and cut the other vegetable, eggplant, and tomato.Instruction:


2.     Then heat a Kadai on gas. Then add 2 teaspoon oil to it and fry the badi. Then take all the badi out once it has done.
3.     Then again add 2 teaspoon oil in the heated Kadai. Then add mustard seed and red chili (dry) in the hot oil.
4.     After crackling the mustard, add finely chopped garlic to it. When it turns to golden brown add the chopped spring onion, eggplant and tomato all together.
5.     Then add salt as required and cover the lid and cook it on a high flame. Once it starts to leave the water lowers the flame. Stir it occasionally.
6.     After 5-7 min add the fried badi to it and give a nice stir and turn off the gas. Serve it hot.

Kabulichana Bhat (Chickpeas Rice)

India, a country  well known for its food, culture and tradition and values. When it comes to its cuisine again well known for its spices, veggies etc. There are 28 states and 9 UTs but each state and UT has its own culture and cuisine.
Chickpeas:
Chickpeas have an impressive nutritional profile. In India chickpeas also known as Chole, Kabuli chana.


Now some nutria fact about my dish.
A 1-ounce (28-gram) serving provides the following nutrients (1):
  • Calories: 46
  • Carbs: 8 grams
  • Fiber: 2 grams
  • Protein: 3 grams
  • Folate: 12%
  • Iron: 4%
  • Phosphorus: 5%
  • Copper: 5%
  • Manganese: 14%
           
 Ingredients: (serving for 4 person)
Chickpeas
100 grams
Basmati Rice
1 cup
Turmeric

Biriyani Masala

Onion
1 large
Green chilly
2 to 3(optional)
Refined oil

Dahi
    2 tablespoon
Salt

Coriander leaves

zeera


Recipe:
1.     Soak chickpeas or Kabuli chana or chole for about 8 hrs or overnight. Then pressure cooks the chickpeas for about 2 to 3 whistle on low to medium flame.

2.     Soak Basmati Rice for 10 min before cooking. The cook the rice on pot or pressure cooker. Then spread the cooked rice on large plate and allow to cool.

3.     Add boiled chickpeas in a pot. Add chopply cutted onion, dahi 1 tablespoon, 2 teaspoon birayani masla, turmeric 1 pinch, salt as per required, 2-3 green chilly cutted from the middle.

4.     Heat a pan.Then adds oil to it. Add zeera to it. When zeera start crackling add the chickpeas mixture to it. When oil start to separate turn off the gas.

5.     Add the cooked chickpeas to the plate of rice and mix it well. And lastly garnish it with freshly chopped coriander leaves.

6.     This dish is very healthy to eat as it includes chickpeas. If you wish to cook it with brown rice you can cook it.
